Bruschetta

Bruschetta

Bruschetta is a recipe that represents summer for me.  Getting to use fresh basil, tomatoes and green onions from my own garden make this a special culinary event in our family.  Make a small batch the first time, but realize that it can be double and tripled for bigger gatherings. BUON APPETITIO!

Ingredients
  –  1 loaf French bread, sliced in 1/2 inch thick slices
  –  Toast at 350° until golden brown
  –  5 roma tomatoes
  –  6 fresh basil leaves
  –  3 green onions with tops
Finely dice the above ingredients
Mix:
  –  1/4 c. olive oil
  –  1 T crushed fresh garlic
  –  2 T red wine vinegar
  –  1 T Lawry’s lemon pepper marinade
(or sub 1 t. fresh lemon juice)

Instructions

Wisk the above ingredients  and add to diced ingredients.  Allow to marinate for up to 1 hour.  Serve on warm toast and top with crumbled feta cheese.
